| 笋干菜 salty dried bamboo shoots with vegetables from artist Boat Zhang's parents' former mountain village. Traditionally pressed in large containers by bare feet then weighted down with stones before drying outside on village street. The bag contains bamboo and xue cai, another vegetable particular to the location. Cooking suggestions: soup stock, dipping sauce, steam with fish, or cook between layers of meat, the shoots will soak up the fat & increase in flavour.
