All ingredients soured through a dense network of friends and contacts, the tradition of mole making speculatively is at least as much about maintaining these relationships than the food itself. Sold from the front room of Rosabla's home in Oaxaca, she doesn't make a huge amount so you need to order a week or so in advance.
